Matcha Dessert
Here are some tried and tested plant-based matcha desserts. Feel free to substitute any of the ingredients to your liking.
Matcha Blondie Recipe
MATERIALS NEEDED
Oven, 8x8 pan, scale, whisk, spatula
RECIPE
200g vegan butter
200g organic brown sugar
130g organic sugar
1 teaspoon psyllium husk powder (egg replacer)
250g flour
2 Tablespoons matcha
1/4 teaspoon salt
1 teaspoon vanilla
(optional) 120g macadamia nuts or vegan chocolate
STEPS
Preheat the oven at 350ºF (180ºC)
Whisk the psyllium husk powder in 80mL of water. Let thicken.
Cream together the butter, sugars and vanilla.
(Wet Mix) Whisk in the psyllium husk mixture into the butter mixture.
(Dry mix) Whisk the flour, matcha, salt and optional nuts together.
Fold the dry mix into the wet mix
Butter the inside of the pan or line it with parchment paper.
Bake for 50-60min.
Let cool before transferring and cutting
